Peanut Butter Noodles | recipe
This is a lovely, zesty & creamy noodle recipe that makes for a great & easy snack. I first saw it on instagram and was very inspired. I tweaked it slightly made it zestier & looser. I hope you enjoy. This is for 1 person, double up for more.

1 Thumb-size of peeled & grated ginger
2 cloves of grated garlic
1/2 tsp of spicy oil (or chilli flakes)
1 tbs of peanut butter
1 tbs of soy sauce
1 tbs of teriyaki
Squeeze of lemon
Sesame seeds (to add at the end if needed.)
Mix grated ginger, garlic & chilli flakes together. Add to 2 tbs of toasted sesame seed oil in a hot pan and stir for 2 minutes, transfer to a big bowl.
Add the peanut butter, soy sauce & teriyaki to the bowl & mix.
Cook the noodle per their instruction.
Add noodles to the peanut butter mixture with 3 tbs of the water the noodles were boiled in.
Add a squeeze of lemon for some extra zest & some sesame seeds are optional.
